Classic Vegan Caesar With Avocado & Chickpeas



I rarely put the word “vegan” into a recipe because that would get tedious. But the reason I’m using it now is that I want to stress that this is a classic vegan Caesar. Not a classic Caesar, but a salad that vegans have been making for as far back as, I don’t know, the 1980s? The legend goes that some vegan awoke from a long VCR’ed Dynasty marathon, with a yearning for garlic and nutritional yeast… and the vegan Caesar was born.

When translating a Caesar salad, you want to capture the tanginess, the creaminess, the umami and the garlickyness. Vegan versions are all over the map, I’ve even published several kinds of Caesar, but this one is three things that cooks love to hear: quick, easy and simple!

The tahini is the creamy base, lending also an irresistible nuttiness. Nutritional yeast and dijon mustard provide the umami tang, and if your mustard is whole grain you get some texture, too. And then there’s garlic! This dressing is kept easy so that there’s no need to break out the blender, just a coffee mug and a fork will do. Use my tip below for a very lazy method of garlic prepping.
As for accoutrement, well, avocado and chickpeas are certainly my go to. But you can do it up in a gazillion different ways. Here are some of my favorite additions: toasted pine nuts, capers, olives, a handful of cooked quinoa, sliced baked tofu (from a package is fine), sliced warm Chickpea Cutlets (or any chicken-y thing), garlicky sourdough croutons, vegan bacon, (deep breath…ok, proceed), tempeh (Chimichurri or Garlicky Thyme), grilled seitan, grilled asparagus, grilled portobello, roasted squash. See? It’s really fun and versatile. And it will get you totally excited about salad! So crimp your hair, protest Reagan and get ready for some classic vegan deliciousness.

Recipe Notes
~ If you’re feeling super lazy about peeling garlic, here’s a trick: Grate it on a microplane, with the skin still on. The skin should stay on top of the grater and fall away. You won’t be able to grate the whole clove, but hey, all in the name of laziness! Just be sure not to start at the nub side (you know, that rough spot at the top of the clove) since it’s too rough to grate.
~ And another garlic thing: You don’t have to waste time measuring garlic into a teaspoon, just eyeball it. Since this dressing comes together in a snap, you can adjust to your tastes very easily.
~ Sometimes tahini does this thing where it seizes and looks curdled and stiff when you add water. I don’t know why! I do know that if you give it a minute, it will go back to normal. (Have you ever experience this weird phenomenon?)

Dressing:
1/4 cup tahini
1/4 cup water (plus more for thinning)
2 teaspoons fresh grated garlic (see note)
2 tablespoons nutritional yeast flakes
2 teaspoons whole grain dijon mustard
1/4 teaspoon salt

Salad:
8 oz romaine (2 hearts), chopped
Handful of baby arugula
15 oz can chickpeas, rinsed and drained (about 1 1/2 cups)
1 avocado diced
Fresh black pepper to taste
Stir together the dressing ingredients in a small bowl, or a coffee mug. Use a fork to blend smooth. Add additional tablespoons of water to thin, as needed. Taste for salt and seasoning. It should be slightly salty, because the saltiness will subside when you dress the salad.
In a large mixing bowl, toss the greens with the dressing. Add the avocado and chickpeas. Serve with fresh black pepper sprinkled on top.

Last week was a week of reunions and meet ups, met some old friends and some not so old.  One of these friendships was made over a pack of Doritos, followed by a pack of Cheetos (this was lunch). We spent the entire day talking and munching, by the end of the day we knew almost everything about each other, that was 15 years ago. Nothing has changed and we still have the same capacity to talk,  hours fly by like minutes and there is always more to share and talk about. There are always some crazy joke that we laugh about and I don't think anyone else finds it

. Handbags, shoes, politics, a bit of philosophy, new recipes 'n stars on food network, Michelle Obama's bangs ....we covered it all. Am sure people were relieved, when we left after lunch, we have some capacity to jabber. A girl thing, right!... I can't imagine my other half spending hours chatting about nothing in particular and being very happy about it. Ah ! the joys of womanhood! I will not have it any other way ! There are some people who just make you comfortable, even though you do not meet them very often....just like food ! Some foods are just comforting and bring you home - to who you are. No rules, no reservations !  I love this soup, it is such a warm hearty soup that fills me up and just makes me feel good !( and low on calories :)) Thank God, for good food and great friends :))


11/2 cup of vegetables of your choice - finely diced

I always add celery, spring onions plus other vegetables - what ever available.

2-3 cups vegetable stock

2 cloves

2 garlic cloves crushed

fresh ground pepper

1/4 tsp vinegar

1/2 tsp soy sauce

1/2 tsp finely chopped fresh ginger

salt to taste

2-3 tsp cilantro finely chopped

1/4 tsp chili oil - optional

Cheese to garnish or serve cheese with bread, a soft cheese like brie goes very well with this soup.



Blanch the vegetables, mix in with the broth, add clove, garlic and ginger, bring to a boil. Add the vinegar, soy sauce, let it sit for 10 min  - serve with bread of your choice. Garnish with cilantro and chili oil. This soup is great for fighting colds !! The ginger and clove really help clear those sinuses.

I promise, I’m not turning vegan. Vegan Pumpkin, Pecan & Coconut Snack Bread on Sunday, Green Lentil Curry on Wednesday. Whaaaaaat?! I love chicken and sushi too much. So, no worries you, clean eating chicken lovers. I promise Healthy Sweet & Sour Chicken recipe is coming next week.
But this curry is so simple, healthy, has as much fiber as protein and is delicious! Even my biggest carnivore of this household aka Alex was texting from work how wonderful his lunch was, and galloped home, opened the fridge and looked for more. Just to find none.

Creamy, sweet and only 5 ingredients. 5 simple pantry ingredients you can stock up on and whip this up in as little as 3 hours. I don’t count water or spices as ingredients. Those are a must to have if you are cooking real food.

Taking my hat off for you. Mine broke a week ago. It won’t drain. Broken dishwasher is the 3rd worst thing that could happen to a food blogger. That’s after the stove and fridge.
So, free spirit and not-on-a-budget Alex says we need a new dishwasher. And frugal Ukrainian part of Olena was in denial for a week. Fiiiiiiiine, I get it. But now I will spend about 2 days, time that I don’t have, researching dishwashers, reading reviews and finding the best price. Then I will wait another week for it to be shipped. I’m sure Alex is rolling his eyes reading this. Well, honey, you never turn off lights. So, we are even. For now, we will enjoy many more crockpot meals. In fact, I make this curry once a week.

Ingredients
    5 Ingredients:
  • 1 large onion, finely chopped
  • 6 garlic cloves, crushed
  • 1 can (14 oz) coconut milk, light
  • 1 can (5.5 oz) tomato paste
  • 2 cups green lentils, rinsed and drained
  • Spices:
  • 1 tsp turmeric
  • 1/2 tsp coriander, ground
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1/4 tsp salt
  • Sub Ingredients:
  • 3 cups boiling water
  • Cooking spray (I use Misto)
  • Garnish (optional):
  • Diced tomatoes
  • Freshly chopped cilantro and/or green onions
Directions
  1. Preheat small skillet on medium heat and spray with cooking spray. Add onion and garlic, cook until golden brown (5 minutes), stirring occasionally. Add Spices and cook for another 30 seconds, stirring frequently. This will allow the depth of flavour in spices to develop.
  2. Transfer the mixture from Step 1 into crockpot. Add coconut milk, tomato paste, hot water and lentils. Stir to combine. Cover and cook on High for at least 3 hours or on Low for 6 hours. Serve hot, topped with diced tomatoes and chopped cilantro/green onions. Garnish is optional but highly recommended.
  3. Storage Instructions: Refrigerate covered for up to 3 days. Freeze in an airtight container for up to 1 month.

BEST WHIPPED CREAM RECIPE… HERE IS THE RECIPE FOR THE STABILIZED WHIPPED CREAM I USED! IT WILL NOT DEFLATE LIKE REGULAR WHIPPED CREAM MIGHT.

4 tablespoons cold water
2 1/2 teaspoons unflavored gelatin
3 cups chilled heavy cream
1 1/2 cups powdered sugar

Add the cold water to a small bowl, then sprinkle the gelatin over it. Allow to sit for about 10 minutes, until it has set.
In a small skillet, add about 1/2 inch of water, and heat over medium-high heat. Place the small bowl with the gelatin directly inside the skillet. Stir the gelatin until it is melted, about 2 minutes. Remove the bowl from the skillet.
In the mixer, use whisk attachment and beat the heavy cream & powdered sugar. Beat on high to soft peaks. Add in the melted gelatin mixture and continue to beat until stiff peaks have formed.
BEST EVER POUND CAKE-HANDS DOWN!!!!

INGREDIENTS:
1 (8 ounce) package cream cheese
1 1/2 cups butter
3 cups white sugar

6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

Directions:
1. Preheat oven to 325 degrees F grease and flour a 10 inch tube pan. (I spray mine with coconut oil spray!)
2. In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
3. Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
4. Pour into a 10 inch tube pan. Bake at 325 degrees F for 1 hour and 20 minutes (I baked mine 1 hour 20 mins and then loosely covered with foil for an additional 20 to be sure it was cooked through-this timing was perfect for me-any less and it would have been undercooked. Judge yours as it bakes as oven can vary.) COOL COMPLETELY BEFORE CUTTING!

Cheesy Garlic and Brown Sugar Pork Chops

The only thing that may have made these baked pork chops better is a splash of bourbon. Inspired by the garlic brown sugar chicken recipe I make, the cheesy garlic and brown sugar pork chops were delicious and easy.

I mentioned easy. The most complicated is dicing garlic. Honestly. A few simple steps and you are on the way to pork heaven. Season each side of the pork chops with brown sugar, garlic, salt and pepper with a dash of paprika and follow up with a drizzle of butter over the top of the pork chops. Use plenty of butter. Butter is a flavor conductor. It will run off and be left behind in the pan, but those pork chops will be juicy thanks to the butter.

Bake the pork chops on 350 for 20-25 minutes or till the pork chops have an internal temp of 155. Then sprinkle with Colby-Jack cheese. Bake for another 5 minutes till cheese is completely melted.

Enjoy with your favorite barbecue sauce. Or not. I ate them plain. There is plenty of flavor, trust me. And of course, they would pair nicely with a bourbon and coke.

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Yield: 4 pork chops
Serving Size: 1 pork chop

  • 1/3 cup brown sugar
  • 4 tablespoons butter, melted
  • 1 teaspoon paprika
  • 1/2 cup shredded colby-jack cheese
  • salt and pepper to taste
Instructions
  1. Rub both sides of pork chops with garlic and brown sugar. Place in square baking dish and drizzle butter over top. Sprinkle with paprika, alt and pepper.
  2. Bake on 350 for 20-25 minutes or till internal temperature is 155 degrees.
  3. Remove from oven and sprinkle with cheese.
  4. Bake for another five minutes.
