Kuttu Singhade ki Pakodi

 These pakodies are my favorite among all the other vrat recipes. Very easy to make, these are crispy and crunchy from outside and soft from inside. Enjoy them with plain yogurt as I like or with coriander chutney. Here is the recipe.

All you need is
Kuttu ka atta – 1 cup
Singhade ka atta – 1 cup
Boiled potatoes – 2 cups ( grated )
Sendha namak to taste
Fresh coriander – 1/4 cup ( chopped )
Green chili – 2 ( chopped )
Oil for frying

Method of preparation
Mix kuttu ka atta, singhade ka atta, sendha namak, fresh coriander, green chili  and grated potatoes in a bowl.
Add water and make a thick batter. ( pakodi like batter )
Heat oil in a non stick pan.
Drop small pakodies in the oil and fry till golden brown from both the sides.
Serve hot with plain yogurt or coriander chutney.
Chutneys are an integral part of Indian cuisine. Most snacks are served with chutneys of different varieties. Here is a coriander chutney which you can enjoy during fast with the various snacks that are made especially for fasting like sabudana vada, aloo paneer ki tikki etc. So here is the recipe.

All you need is
Fresh coriander – 1 cup ( chopped )
Green chili – 2-3
Ginger – 1 inch piece
Salt to taste ( use sendha namak if making for fast )
Cumin seeds – 1/2 tsp
Heeng – A pinch
Lemon juice – 3 tbsp

Method of preparation of Dhaniya Ki Chutney
Blend all the ingredients in a blender to make a smooth paste.
Add very little water if required.
